Roasting

Our coffee is roasted for 11 to 15 minutes, depending on the desired roast.  During the roasting process the volatile flavor oils develop, the darker the roast the oilier the bean.  Over roasting will destroy the volatile oils and caramelize the sugars causing a loss of flavor.

Once roasting is finished, beans are immediately moved to a cooling tray for quick cooling to stop the roasting process.  Roasted coffee is measured by color and flavor. 
 

Roast colors at M&M:

  1. Medium is the color of milk chocolate 
  2. Medium Dark is the color of dark chocolate
  3. Dark is oily and the color of dark, dark chocolate
